Grilled Lemon Herb Chicken Skewers with Easy Dipping Sauce

An Easy Appetizer or Main Course

Lemon Herb Chicken Skewers are a versatile and delicious dish that I love to serve at parties. Whether you’re looking for an appetizer or a main course, these skewers are a healthy addition to any menu. In fact, you might want to make extra because the leftovers are perfect for a refreshing salad or a satisfying bowl with rice and veggies!

As an appetizer, these skewers make an excellent centerpiece for your menu. Pair them with a fruit, vegetable, and cheese board, and your party is complete. As a main course, the skewers go well with a mixed green salad, rice or potatoes, and grilled veggies.

Preparing the Lemon Herb Chicken Skewers is a breeze. I like to make the marinade the night before, so when the guests arrive, all I have to do is grill the skewers for a few minutes. (Actually, I must give credit where it is due. My husband is the one who does the grilling!)

For this particular recipe, I’ve used fresh basil, rosemary, and thyme, mainly because my herb planter was overflowing with them that day. However, I encourage you to experiment with whatever herbs you have available!

In case you don’t have fresh herbs on hand, you can easily substitute them with dried herbs, just remember to reduce the amount. According to an article titled “How to Cook with Fresh and Dried Herbs” published on Marthastewart.com, you can use one teaspoon of dried herbs in place of one tablespoon of fresh herbs.

Lemon Herb Chicken Skewers with Dipping Sauce

These delicious chicken skewers are perfect for your summer gathering. A marinade of lemon juice, garlic, and fresh herbs is quick and easy to put together. Serve with Lemon Herb Sauce on the side. Can be served as an appetizer or a main course.

Ingredients
  

For the Chicken Skewers:

  • 1-1/4 pounds Chicken breast, cut into cubes
  • ¼ cup Lemon juice
  • ¼ cup Olive oil
  • ¼ cup Fresh basil leaves, coarsely chopped
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme
  • 4 cloves Garlic, minced
  • dash Salt and pepper

For the Sauce:

  • ½ cup Mayonnaise
  • ¼ cup Sour cream
  • 2 tbsp Fresh basil, chopped
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme, chopped
  • ½ clove garlic, minced
  • 1 tbsp lemon juice
  • dash salt and pepper

Instructions
 

For the skewers:

  • Thread chicken pieces onto skewers
  • Mix the lemon juice, olive oil, herbs, garlic, salt, and pepper in a small bowl and pour over the chicken
  • Massage marinade into chicken pieces
  • Allow chicken to rest in marinade for at least 6 hours, or overnight
  • When ready to cook, place chicken skewers on hot grill
  • Cook on a hot grill, turning frequently, until done. Approximately 20 minutes.

Sauce:

  • Mix all sauce ingredients together in a small bowl
  • Store the sauce in the refrigerator at least 2 hours before serving
  • Makes approximately 1 cup of sauce

Notes

  • If you are using wooden skewers, soak them in water for at least 30 minutes prior to using them
  • Resist the urge to add more garlic to the sauce. It can easily overwhelm the other flavors
  • This recipe is great as an appetizer or served as a main course
