Lemon Herb Chicken Skewers with Dipping Sauce

These delicious chicken skewers are perfect for your summer gathering. A marinade of lemon juice, garlic, and fresh herbs is quick and easy to put together. Serve with Lemon Herb Sauce on the side. Can be served as an appetizer or a main course.

For the Chicken Skewers: 1-1/4 pounds Chicken breast, cut into cubes ¼ cup Lemon juice ¼ cup Olive oil ¼ cup Fresh basil leaves, coarsely chopped 1 tbsp Fresh rosemary, chopped 1 tbsp Fresh thyme 4 cloves Garlic, minced dash Salt and pepper For the Sauce: ½ cup Mayonnaise ¼ cup Sour cream 2 tbsp Fresh basil, chopped 1 tbsp Fresh rosemary, chopped 1 tbsp Fresh thyme, chopped ½ clove garlic, minced 1 tbsp lemon juice dash salt and pepper
For the skewers: Thread chicken pieces onto skewers
Mix the lemon juice, olive oil, herbs, garlic, salt, and pepper in a small bowl and pour over the chicken
Massage marinade into chicken pieces
Allow chicken to rest in marinade for at least 6 hours, or overnight
When ready to cook, place chicken skewers on hot grill
Cook on a hot grill, turning frequently, until done. Approximately 20 minutes.
Sauce: Mix all sauce ingredients together in a small bowl
Store the sauce in the refrigerator at least 2 hours before serving
Makes approximately 1 cup of sauce
If you are using wooden skewers, soak them in water for at least 30 minutes prior to using them
Resist the urge to add more garlic to the sauce. It can easily overwhelm the other flavors
