Strawberry Elderflower Spritz: Light, Refreshing, and Beautiful
This Strawberry Elderflower Spritz is a light, refreshing cocktail that feels elegant without being complicated. Inspired by the classic Hugo Spritz, this version adds a touch of strawberry simple syrup for natural sweetness and beautiful color. The result is bright, easy to sip, and just right for brunch with friends, a spring luncheon, a baby or bridal shower, or a hot afternoon on the patio.
A Beautifully Balanced Spritz
Simple ingredients come together in a cocktail that is light, fresh, and not overly-sweet.
- Strawberry simple syrup adds fresh fruit flavor. You can absolutely use store-bought, but I highly recommend my Homemade Strawberry Simple Syrup. It takes just minutes to make and tastes so good.
- St. Germaine elderflower liqueur brings a delicate floral note.
- A splash of fresh lemon juice cuts some of the sweetness.
- A sprig of fresh mint adds a light, bright flavor.
- Prosecco makes it crisp and celebratory.
- A garnish of fresh sliced strawberries makes it beautiful.

Hosting Tip (For a Crowd)
You can pre-mix the strawberry simple syrup, elderflower liqueur, and lemon juice up to 24 hours in advance. Store it in the refrigerator, then pour the base into glasses as guests arrive and top each one with prosecco.
Create a beautiful drink station where guests can help themselves. Set out the pre-mixed base, sliced strawberries, fresh mint, and chilled bottles of prosecco.
Strawberry Elderflower Spritz
Ingredients
- 1½ ounces strawberry simple syrup
- ½ ounce St. Germaine Liqueur (or other elderflower liqueur)
- ¼ ounce freshly squeezed lemon juice
- 4-5 fresh mint leaves
- 4 ounces Prosecco (or other favorite bubby)
- mint sprig and sliced strawberries, for garnish
Instructions
- Pour strawberry simple syrup, elderflower liqueur, and lemon juice into a large wine glass.
- Gently clap the mint leaves between your hands to release their oils, then add them to the glass.
- Add a generous amount of ice to the glass, and stir well.
- Top with prosecco and give one gentle stir.
- Garnish with a mint sprig and fresh strawberry slices. Serve immediately.
Notes
You may pre-mix the strawberry simple syrup, elderflower liqueur, and lemon juice in advance. Store covered in the refrigerator for up to 24 hours.
- For 8 servings, mix together
- 12 ounces strawberry simple syrup
- 4 ounces elderflower liqueur
- 2 ounces fresh lemon juice
