Ingredients You Will Need
These make-ahead mashed potatoes are made using simple ingredients that you may already have in your pantry.
- Russet potatoes, peeled and chopped into 1-inch cubes
- Salt and pepper
- Cream cheese spread
- Dried chives
- Butter
- Dried parsley
- Paprika

How To Make Creamy Potato Bake
- Preheat the oven to 400°F (200°C) and spray a 2-quart casserole dish with cooking spray.
- Boil the potatoes: Place the chopped potatoes in a large pot, cover with water, and add 2 teaspoons of salt. Bring to a boil and cook for about 12 minutes, or until tender when pierced with a fork.
- Drain the potatoes and return them to the pot.
- Mash the potatoes to your desired consistency. (I like to leave a few lumps for texture.)
- Mix in the cream cheese, chives, pepper, and additional salt to taste.
- Transfer the mixture into the prepared casserole dish, leaving some room at the top to avoid spills.
- Top with butter, cut into small pieces, and sprinkle paprika and parsley over the top.
- Bake for 30 minutes, or until the top is golden and the potatoes are heated through.

To make a potato pancake: Melt butter in a skillet over medium heat. Form the mashed potatoes into small patties and brown them in the butter. Flip the potato pancake carefully once the bottom is golden and crisp. Cook until the other side is crispy and brown.

Ingredients
- 8 cups russet potatoes , peeled and chopped into 1-inch cubes (approximately 5 medium size potatoes)
- 2 tsp salt, or to taste
- ¼ tsp ground black pepper
- 16 oz cream cheese spread
- 3 Tbsp dried chives
- 3 Tbsp butter
- 2 Tsp dried parsley
- ⅛ tsp paprika
Instructions
- Preheat oven to 400 degrees. Spray a 2 quart casserole dish with cooking spray
- Place potatoes into a large pot and cover with water. Add 2 tsp salt
- Bring potatoes to a boil and cook 12 minutes, or until tender
- Drain water from potatoes and return the potatoes to the cooking pot
- Mash potatoes using a potato masher
- Add cream cheese spread, chives, and pepper. If desired, add additional salt to taste. Mix well
- Place the potato mixture into the prepared casserole dish
- Cut butter into small pieces and place on top of potatoes
- Sprinkle paprika and parsley on top of potatoes
- Bake at 400 degrees for approximately 30 minutes until the top is a golden color
