Because of their size, you can indulge in a little dessert without going overboard—but trust me, you’ll want to make a lot because it’s hard to have just one!

Ingredients

  • Biscoff cookies: One 8.8 oz package
  • Vanilla Ice Cream: Tillamook is my favorite, approximately 1.5 cups
  • Dark Chocolate chips: 5 oz, I used Ghirardelli 72% cacao

Equipment

  • While not necessary, I used a small offset spatula for spreading the ice cream.
  • A baking sheet that will fit into your freezer (mine had to be small!).
  • Parchment paper

How to Make Biscoff Ice Cream Sandwiches

  1. Soften Ice Cream: Allow the ice cream to sit at room temperature for a few minutes to soften, making it easier to spread.
  2. Assemble Sandwiches: Spread ice cream onto a Biscoff cookie and top with another cookie.
  3. Freeze: Place in the freezer for approximately one hour or until firm.
  4. Melt Chocolate: In a microwave-safe bowl, melt chocolate chips in the microwave according to package directions. The brand I used recommended 50% power, stirring every 30 seconds.
  5. Dip in Chocolate: Dip one end of the ice cream sandwich into the melted chocolate.
  6. Set in Freezer: Return to the freezer for at least 20 minutes until the chocolate is set and the ice cream is firm.

Helpful Tips

Ingredients
  

  • 1 package Biscoff cookies (8.8 ounce)
  • cups vanilla ice cream
  • 5 ounces Dark Chocolate chips (approximately 1 cup)

Instructions
 

  • Allow ice cream to soften at room temperature for a few minutes so that it's easy to spread, but not melted
  • Spread 1 to 2 tablespoons of ice cream onto a Biscoff cookie
  • Top with another cookie
  • Place the sandwiches onto a baking sheet lined with parchment and freeze for approximately one hour, until firm
  • Melt chocolate chips in the microwave according to package directions
  • Dip one end of each ice cream sandwich into the melted chocolate
  • Return ice cream sandwiches to the freezer for approximately 20 minutes until firm
  • Once the Biscoff Ice Cream Sandwiches are firm, transfer to an airtight container
