Spinach Quiche: A Deliciously Simple Brunch Recipe
A Quick and Easy Recipe that is perfect for Entertaining
This quiche recipe comes together quickly and easily, thanks to the refrigerated pie crust. The tanginess of the swiss cheese compliments the spinach and shallots. Red bell pepper adds dimension to the flavor as well as a pop of color. This is the perfect recipe for a brunch party, a luncheon, or even a light dinner.
Spinach Quiche
Ingredients
- 1 refrigerated pie crust
- 1 teaspoon olive oil
- 1 medium shallot, chopped
- 6 large eggs
- ¾ cup heavy cream
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 2 cups spinach, rough chopped
- ¼ cup red bell pepper, diced
- 1 ½ cups shredded swiss cheese
Instructions
- Preheat oven to 375 degrees
- Unroll pie crust and press into 9 inch pie plate or quiche dish
- Heat olive oil in small skillet over medium heat
- Add shallots and sauté until soft. (Approximately 3-5 minutes). Remove from heat and let cool
- In a large bowl, whisk together eggs, heavy cream, salt, black pepper, and red pepper flakes
- Place spinach, cheese, cooked shallots, red bell pepper into pie plate
- Pour egg mixture over the top
- Bake 35-40 minutes until the center is set. Allow to cool for 5 minutes before slicing and serving
Notes
- A refrigerated pie crust makes this recipe come together quickly and easily
- I prefer heavy cream, but you can use half-and-half or milk
