The autumn experience is quite dependent upon where you live. We spent many years up North, and honestly, the feeling of that first crisp fall day is quite amazing. The leaves begin to change colors, the sky takes on a brighter shade of blue, and we pull the jackets out of storage.

A few years ago we moved back to Florida, and autumn down here is a completely different experience. We change from our summer pool floats (down in the water) to the fall pool floats (above the water). Eventually, the water becomes too cold and we must sit beside the pool instead.

But, no matter where we live, and what our weather is, once the days become shorter we search for ways to enjoy the new season. This Brown Butter Pumpkin Bread recipe will set the tone and the mood of the fall season. The mouthwatering aroma and gentle spiciness add a touch of familiarity and comfort to the cooler days.

This particular recipe was inspired by the TikTok content creator Zoe Barrie. As with most recipes, I enjoy adding my own spin on things. In my opinion, the creativity of cooking is the best part! Just one search on the internet leads to a treasure trove of brown butter articles and tutorials. But what exactly is brown butter? Brown butter is simply butter that has been cooked on top of the stove. The milk solids in the butter separate from the fat and sink to the bottom of the pan. Once they are on the bottom of the pan, they turn brown. The result is a delicious rich, nutty flavor and an amazing nutty aroma. How to Make Brown Butter Pumpkin bread

The ingredients:

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 can pumpkin puree (15 oz.)
  • 2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1 tbsp vanilla (Yes, you read that correctly- One tablespoon!)

For the Streusel:

  • 3 tbsp softened butter
  • 1/4 cup brown sugar
  • 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp pumpkin pie spice
  • 1/2 cup chopped walnuts

Now let’s put it all together:

Streusel Instructions:

  • In a small bowl combine the softened butter, brown sugar, flour, salt, cinnamon, nutmeg, and pumpkin pie spice
  • Mix together with your fingers until a crumbly texture is achieved
  • Stir in chopped walnuts

Making the Bread:

  • Preheat oven to 350℉
  • Spray a loaf pan with baking spray, such as Baker’s Joy. (If you do not have Baker’s Joy, then you may butter and flour the pan, or line it with parchment paper.)
  • Mix together flour, salt, and baking powder in a medium size bowl and set aside.
  • Place the butter into a skillet over medium heat and cook until browned, stirring frequently
  • Carefully pour the brown butter into a large mixing bowl and stir in the sugar
  • Add eggs and pumpkin puree, stirring well after each addition
  • Mix in pumpkin pie spice, nutmeg, and vanilla
  • Fold in flour mixture, mixing well
  • Layer one half of the bread batter, then one half of the streusel mix into the prepared loaf pan
  • Add the remaining bread batter and then top with the remaining streusel mix
  • Bake at 350° for 55-60 minutes

Serving and Sharing Brown Butter Pumpkin Bread

My favorite part of this recipe is the delicious aroma that wafts throughout the house while it is baking. On the day that I created this recipe and took the photos, it was 88 degrees outside. (Welcome to Florida!!) But inside, the ambiance was pure Autumn.

The nuttiness of the brown butter, the flavorful spices, and the crunchy texture of the nuts all come together in this tasty pumpkin bread. It is wonderful to serve warm straight from the oven. But you can also prepare it ahead and freeze it for a later date.

Pumpkin bread is an easy breakfast for a busy holiday morning: serve it with fresh fruit, coffee, and juice. Or, add it to a full brunch menu that may include Spinach Quiche or Breakfast Casserole. This recipe also makes a great gift for friends and family. Simply wrap it up in cellophane and tie with a pretty bow.

Instructions

Streusel mix instructions

  • In a small bowl combine the softened butter, brown sugar, flour, salt, cinnamon, nutmeg, and pumpkin pie spice
  • Mix together with your fingers until a crumbly texture is achieved
  • Stir in chopped walnuts

Notes

  • Take care not to burn the butter as you’re browning it on the stove.  The butter should have a nutty fragrance and a rich brown color
  • If you do not have Baker’s Joy, you may butter the pan and dust with flour, or line the pan with parchment paper
  • Test for doneness by inserting a toothpick into the center of the bread. It should come out clean
  • Cool the pumpkin bread on a wire rack for a few minutes before serving.
  • This recipe freezes well. Wrap the cooled pumpkin bread in plastic wrap and place into a zippered bag. Remove from freezer and allow to thaw before serving.
