Biscoff Ice Cream Sandwiches

This is an easy dessert to whip up with just three ingredients. These Biscoff Ice Cream Sandwiches can be made ahead of time and stored in the freezer, ready to satisfy your sweet cravings. The sweet cinnamon flavors of the Biscoff cookies pair perfectly with creamy vanilla ice cream and rich dark chocolate. The small size is ideal for a light dessert when you just want a little something sweet.

1 package Biscoff cookies (8.8 ounce) 1½ cups vanilla ice cream 5 ounces Dark Chocolate chips (approximately 1 cup)
Allow ice cream to soften at room temperature for a few minutes so that it's easy to spread, but not melted
Spread 1 to 2 tablespoons of ice cream onto a Biscoff cookie
Top with another cookie
Place the sandwiches onto a baking sheet lined with parchment and freeze for approximately one hour, until firm
Melt chocolate chips in the microwave according to package directions
Dip one end of each ice cream sandwich into the melted chocolate
Return ice cream sandwiches to the freezer for approximately 20 minutes until firm
Once the Biscoff Ice Cream Sandwiches are firm, transfer to an airtight container
Allow the ice cream to soften for a few minutes, which will make it easier to spread on the cookies.
Work quickly so that the ice cream does not melt too much.
I placed my baking sheet in the freezer prior to making the recipe, so I had a cool surface to put the ice cream sandwiches on.
Parchment paper or wax paper on the baking sheet makes cleanup a breeze.
