How Mrs. O’s Bacon Cheddar Bites became so popular

The History

Many years ago, a neighbor shared this fantastic recipe with my husband’s family. My mother-in-law, being the diligent homemaker she was, would spend an entire day preparing these delectable snacks, carefully packing them into quart-size Ziploc bags, and storing them in the freezer. When my husband and his brother returned from school, they eagerly headed to the garage freezer, grabbed a bag of these delights, and popped them into the oven. What an absolute treat for an after-school snack!

The snacks became an instant hit, loved not only by immediate family members but also by friends and relatives who would visit. The only hiccup was that our neighbor, who generously shared the recipe, had not given it any official name. So, my creative mother-in-law took the initiative and dubbed them “BO Snacks” after the neighbor’s initials, B.O.

A New Name for an Old Favorite

Fast forward many years, and my husband and I still serve this amazing appetizer. But as I contemplated sharing this recipe on my blog, I realized that the name “BO Snacks” might not do justice to their mouthwatering appeal. It was time for a makeover.

Therefore, I’m thrilled to introduce you to “Mrs. O’s Bacon Cheddar Bites.” This new name captures the essence of these scrumptious morsels, paying homage to my mother-in-law’s creative spirit while giving the snacks the attention they truly deserve. Trust me; once you try them, you’ll understand why they’ve been a cherished part of our family for so long!

It's a delicious and easy treat to have on hand when unplanned guests stop by. The original recipe called for sliced white bread– I updated it to use sliced baguette. Ask the bakery to pre-slice the baguette for nice even slices and a great time-saver!
