This Artichoke Cheese Dip recipe is a very quick and easy appetizer to prepare. It pairs perfectly with pita chips, crostini, or tortilla chips. This delicious dip can be made ahead and baked just before serving.

The History of This Artichoke Cheese Dip

Years ago, my husband’s mother shared a savory recipe with us, and it quickly became a favorite in our household. However, as life got busier with three little kids, I found myself opting for the convenience of a store-bought spinach artichoke dip, which was quite tasty and saved time.

Recently, while going through my recipe file, I stumbled upon her old recipe and decided to revisit it after all these years. I thought it might be nice to give it a try again and see if it still held up to our memories.

To my delight, it absolutely did! The homemade version turned out to be a culinary gem, distinct from the store-bought dip we’ve been accustomed to. The recipe strikes the perfect balance of flavors, with just the right amount of parmesan lending its delicious essence, while a hint of cayenne pepper adds a pleasant spicy kick at the end.

Reconnecting with this old family recipe brought back wonderful memories and a renewed appreciation for the homemade goodness that’s worth the extra effort. From now on, I’ll be savoring this delightful homemade spinach artichoke dip that connects us to our past and brings joy to our taste buds.

How It’s made

To start, preheat your oven to 325 degrees. Begin by draining a can of artichoke hearts, and then coarsely chop them in a food processor. Next, in a mixing bowl, combine 1/2 cup of mayonnaise, 1/2 cup of freshly grated parmesan cheese, garlic powder, onion powder, kosher salt, and a dash of cayenne pepper, adjusting the spiciness to your preference. Add this creamy mayonnaise mixture to the chopped artichokes, making sure to mix everything together thoroughly.

Now, transfer the flavorful mixture into a small baking dish, one that holds approximately 2 cups. Sprinkle the remaining parmesan cheese on top to add an extra layer of cheesy goodness. Place the baking dish in the preheated oven and let it bake for about 30 to 40 minutes until it becomes wonderfully bubbly and achieves a beautiful golden-brown crust on top.
