During the holidays, mornings can be quite hectic with family visits, last-minute preparations, and the anticipation of a big meal later in the day. However, with this breakfast casserole, you can take a few minutes the night before to prepare it. When everyone wakes up, they’ll be greeted with a hearty breakfast that will keep them fueled for the busy day ahead.

Weekend House Guests

When you have guests staying over for the weekend, this breakfast casserole will come to the rescue. Its make-ahead convenience allows you to spend less time in the kitchen and more time enjoying the company of your loved ones. Plus, the savory aromas wafting through the house when it’s baking will surely make your guests’ mornings delightful.

The beauty of this dish is its convenient preparation the evening before your big day. As the sausage sizzles on the stove, chop the onions and peppers. Next, create layers in the baking dish: bread, sausage, peppers, and onion. Top it off with tangy cheese. (I like to use extra sharp cheddar)

In a separate bowl, combine eggs, milk, spices, hot sauce, flour and butter. Mix it really well and pour it over the top of the layered ingredients.

Finally, cover the dish and let it rest in the refrigerator overnight, allowing all the ingredients to meld together beautifully. It’s astonishing how something so delicious can be so effortlessly prepared!

The next day, all you have to do is pop it into a hot oven. Fifty minutes later, Breakfast is served!

Breakfast Casserole any time of day

The title of this recipe is Breakfast Casserole, but that doesn’t mean that it should only be served during the morning hours. when paired with a salad of mixed greens, it makes a delicious and easy dinner as well.

Back when our kids were young and active in sports, I would mix up the casserole in the morning. When we arrived home from afternoon activities, all I had to do was pop it in the oven. While it was cooking in the oven, I was free to do other things.

Ingredients
  

  • 1 pound bulk sausage
  • 4 cups French bread (preferably day-old), cubed
  • ½ cup yellow bell pepper, sliced
  • ½ cup red bell pepper, sliced
  • ½ cup sweet onion, sliced
  • 1 cup extra sharp cheddar cheese, grated
  • 4 eggs, beaten
  • 3 cups milk
  • 1 tsp dry mustard
  • 5 dashes hot sauce
  • 3 Tbsp flour
  • 2 Tbsp butter, melted
  • ¼ tsp pepper
  • ¼ tsp salt

Instructions
 

  • Crumble sausage into skillet and cook over medium-high heat until cooked through. Drain, and set aside
  • In a medium bowl combine eggs, milk, mustard, flour, hot sauce, butter, salt, and pepper
  • Lightly grease a 9×13 pan. Layer cubed bread, sausage, red and yellow peppers, onion, and cheese
  • Pour egg mixture over the top
  • Cover and refrigerate overnight, or at least 6 hours
  • Bake uncovered at 350 degrees for 50-60 minutes. Until bubbly and brown on top

Notes

  •  Jimmy Dean Sage sausage is my favorite choice for this recipe. However, it will be great with any sausage you choose
  • Freshly grated cheese is best for this recipe, but pre-grated cheese will work in a pinch
  • For breakfast or brunch: Serve with fresh fruit 
  • This dish is a perfect “Breakfast for Dinner” option. Serve with a nice salad of mixed greens
  • This is a perfect dish for the holidays and for weekend house guests because all the prep work is done beforehand
