Breakfast Casserole with Sausage, Peppers, and Onion

The sweetness of the red and yellow pepper complements the savory sausage in this delicious breakfast casserole. Mix it up the night before, and pop it in the oven just before your guests arrive. This dish also makes a wonderful dinner main course served alongside a salad of mixed greens.

1 pound bulk sausage 4 cups French bread (preferably day-old), cubed ½ cup yellow bell pepper, sliced ½ cup red bell pepper, sliced ½ cup sweet onion, sliced 1 cup extra sharp cheddar cheese, grated 4 eggs, beaten 3 cups milk 1 tsp dry mustard 5 dashes hot sauce 3 Tbsp flour 2 Tbsp butter, melted ¼ tsp pepper ¼ tsp salt
Crumble sausage into skillet and cook over medium-high heat until cooked through. Drain, and set aside
In a medium bowl combine eggs, milk, mustard, flour, hot sauce, butter, salt, and pepper
Lightly grease a 9x13 pan. Layer cubed bread, sausage, red and yellow peppers, onion, and cheese
Pour egg mixture over the top
Cover and refrigerate overnight, or at least 6 hours
Bake uncovered at 350 degrees for 50-60 minutes. Until bubbly and brown on top
Jimmy Dean Sage sausage is my favorite choice for this recipe. However, it will be great with any sausage you choose
Freshly grated cheese is best for this recipe, but pre-grated cheese will work in a pinch
For breakfast or brunch: Serve with fresh fruit
This dish is a perfect "Breakfast for Dinner" option. Serve with a nice salad of mixed greens
