Cheesecake Parfait

A perfectly portable dessert that is great for picnics at the beach, the park, or the backyard. Serve it up in little mason jars. So easy to pack, and so delicious!

Ingredients
  

  • 10 sheets graham crackers
  • 5 tbsp butter, melted
  • 1 tbsp sugar
  • 2 packages cream cheese, 8 ounces each
  • 1 can sweetened condensed milk (14 ounce)
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp vanilla extract
  • 1-1/2 cups fresh strawberries, sliced
  • 1-1/2 cups fresh blueberries

Instructions
 

  • Place graham crackers in a food processor and grind to fine crumbs. (You may also place them in a plastic zipper bag and crush them with a rolling pin.)
  • Pour crumbs into a medium bowl and stir in sugar
  • Add melted butter, and mix well
  • Set aside 3 tablespoons of graham cracker mixture to use as a garnish
  • Divide the remaining graham cracker mixture among 6 small containers
  • Press the crumbs firmly into the bottom of the containers. Place in the freezer while you prepare the filling
  • Using a mixer set at a medium-high speed beat the cream cheese until fluffy and smooth
  • Add the sweetened condensed milk, a little at a time. Beat well in between additions, and scrape down the sides of the bowl
  • Add lemon juice and vanilla extract, and mix well
  • Layer about half of the cream cheese mixture on top of the graham cracker crusts
  • Add a layer of fruit, either strawberries or blueberries
  • Layer the remaining cream cheese mixture on top of the berries
  • Add remaining berries onto the top of the cream cheese mixture
  • Garnish with the reserved graham cracker crumbs
  • Refrigerate at least one hour before serving

Notes

  • Use fresh berries for this recipe. You may substitute other berries if you like
  • Use the full-fat block of cream cheese, not the whipped variety, and not reduced fat
  • Be sure to mix in the sweetened condensed milk a little at a time, mixing well in between additions
  • Do not prepare this recipe more than 24 hours before serving. If you need to prepare further in advance, just add all of the cream cheese mixture at once and top with the berries before serving.
